A deliciously mature cheese with both savoury and naturally sweet notes. Due to it's maturity, this cheese has developed calcium lactate crystals throughout the body of the cheese, giving it the distinctive crunch associated with well mature cheeses. Use of trad. starter cultures. Own farm, 2000 cows, all milk produced used for Barbers own cheeses.
