A fresh cheese matured and mould ripened with geotrichum candidum, its soft smooth and rich, with a savoury nose.
Named in honour of Cynthia, the Davenport matriarch who started the Dairy at Cote Hill farm in the 50s, it was her favourite flower, growing and thriving across the farm, in the hedgerows and verges.
