From Golden Cross in Sussex this is a soft ewe's milk cheese which is sweet in flavour. Developed by the Blunts along with Cheesemaker James Aldridge, the moulded cheeses are brined and matured. The smooth ivory paste has a melting texture and subtle flavour.
