Broccoli and Lancashire blue cheese soup

Ingredients
- 1 Onion
- 1 Stick of celery, sliced
- 1 Leek, sliced (white part only)
- 1 Medium potato cut into cubes
- 1 tbsp Butter
- 2 Small heads of broccoli, cut into florets
- 140g (1 1/4 cups) Crumbled Lancashire blue
Instructions
Step 1:
Add to slow cooker
Put all of the ingredients into your slow cooker. Stir to combine.
Step 2:
Cook
Put the lid on the slow cooker and cook on high.
Time required: 4 hours (or 8 hours on low)
Step 3:
Prepare and serve
Carefully transfer batches of the cooked soup to a blender and blend until smooth. Ladle into bowls and top with extra crumbles of blue cheese (if desired).
