Ingredients

  • 1 Onion
  • 1 Stick of celery, sliced
  • 1 Leek, sliced (white part only)
  • 1 Medium potato cut into cubes
  • 1 tbsp Butter
  • 2 Small heads of broccoli, cut into florets
  • 140g (1 1/4 cups) Crumbled Lancashire blue

Instructions

Step 1:

Add to slow cooker

Put all of the ingredients into your slow cooker. Stir to combine.

Step 2:

Cook

Put the lid on the slow cooker and cook on high.

Time required: 4 hours (or 8 hours on low)

Step 3:

Prepare and serve

Carefully transfer batches of the cooked soup to a blender and blend until smooth. Ladle into bowls and top with extra crumbles of blue cheese (if desired).
