Broccoli & Stilton Soup

Rich, creamy, and full of comforting flavours, this Broccoli & Stilton Soup is the perfect dish for cooler days. Packed with tender broccoli, soft potatoes, and finished with the bold, tangy notes of Long Clawson reserve blue Stilton, it's a classic recipe that's both hearty and satisfying. Easy to prepare and ideal for serving 4-6 people, this soup is a guaranteed crowd-pleaser — especially when topped with a swirl of double cream and a crumble of extra Stilton for a luxurious finish.
Ingredients
- 20g Salted butter
- Onion, finely chopped
- Garlic cloves, crushed
- Broccoli, finely chopped (including stalks)
- Potato, cut into 1cm chunks
- Vegetable stock
- Long Clawson reserve blue Stilton
- Whole Milk (use to get to required thickness)
Instructions
Step 1:
Melt the butter
Melt the butter in a large saucepan over medium heat. Add the onion and cook, until the onions have turned translucent.
Step 2:
Cook the garlic, broccoli, and potato
Add the crushed garlic along with the chopped broccoli and potato. Stir to coat and cook for a further 3-4 minutes.
Time required: 3-4 minutes
Step 3:
Season and cook until soft
Add the stock and season with salt and pepper. Bring to a simmer and then cover with a lid. Cook for 15-20 minutes, until everything is completely soft.
Time required: 15-20 minutes
Step 4:
Blend the soup and add stilton
When the vegetables are all softened, remove from the heat, stir through the 125g Stilton and blend until smooth using a handheld liquidiser or blender. Slowly add the milk until you get to the required thickness you like. Optionally at this point, you can pass the soup through a fine-mesh sieve to ensure a completely smooth soup.
Step 5:
Prepare and serve
Taste and season with any more salt and pepper if required. Once your happy place into your favourite bowl and garnish with a swirl of double cream and a sprinkling of crumbled long Clawson reserve blue Stilton on top.
